Squash Apple Soup

SQUASH APPLE SOUP

  • 2 tsp  butter (olive oil for vegans)
  • 3 leeks
  • 1 apple , peeled, and cored
  • 8 cups of peeled, cubed butternut squash( 1 large squash)
  • 1 potato
  • 4 cups of homemade chicken or vegetable stock
  • 1 clove of garlic
  • 1 tsp salt
  • 1/4 tsp pepper
  • raisins, and sautéed leeks for toppings
  1. Heat butter or oil in pot, add leeks and cook until wilted
  2. Add diced potato, apples, and squash, and stock. Bring to a boil, reduce heat, cover and let simmer for 30 minutes or until squash is falling part.
  3. Puree soup, add stock or water if too thick.
  4. sprinkle with raisins, and sautéed leeks
